From what I understand, they intentionally do not support this any longer.
See "No more major and minor tags" in https://github.com/astral-sh/setup-uv/releases/tag/v8.0.0

Ouch indeed, and I do now recall having read that 😅 |
They provide immutable tags, so it should be safer, but a bit noisy to maintain (with dependabot creating PRs for each version bump).
