docs: bump Last reviewed markers to 2026-05-09#1

The Repo GC workflow's entropy:check step has been red since 2026-05-04 because all 36 docs/ markdown files had Last reviewed markers >45 days old (stale-doc threshold in scripts/entropy-check.mjs). Same review cycle as the previous mass bumps in 2026-02-17 and 2026-03-04 — the docs are still accurate, just past their refresh deadline. entropy-check before: failed (36 issue(s)) entropy-check after: passed No content changes, only the timestamp on the `Last reviewed:` line of each file.
