Ad-hoc signing the assembled bundle with a fixed identifier keeps the CDHash stable across rebuilds, so macOS stops asking for Accessibility permission every time you build from source. Note this only affects local builds - scripts/sign_notarize.sh re-signs with the Developer ID immediately afterwards, so released builds were never affected. Thanks to @alvst.
