doc/deploy.md: broken link to deleted xmtp-contracts-image.md

Problem

doc/deploy.md contains a broken link:

documentation

This returns 404.

Root Cause

The file doc/xmtp-contracts-image.md was intentionally deleted in xmtp/smart-contracts#116 ("Settlement chain smart contract overview docs"), which described a containerized local development environment. No replacement page was created.

Question

Should this link be:

• Replaced with another page from smart-contracts/doc/ (e.g. deployment.md)?
• Removed and left as plain text?
• Updated once new documentation is created?

I checked doc/deploy.md and confirmed the link to https://github.com/xmtp/smart-contracts/blob/main/doc/xmtp-contracts-image.md returns 404. The file was deleted in xmtp/smart-contracts#116. I see deployment.md exists in that repo as a potential replacement. Would you still accept a minimal PR to update this broken link in doc/deploy.md?
