Update stable version tag: Update .semaphore deploy file and add a tag that points to the correct commit

In order to change the stable version tag across repositories, we need to point the .sempahore deploy script to the new container name.

Additionally: Update the Sentry release tag

Don't forget the impact this has on Docker hub, ansible and the current folder structure on the server
