Remove now-unsupported mongo_extras_version properties from catalog data files

2026 catalogs only support MongoDb v7 and 8 ... there is no need to carry these properties forward indefinitely.

mongo_extras_version_6: 6.0.12

Remove them from all modern (2026) catalogs, and verify the mirror roles in ansible-devops handle their absence correctly.
