elasticsearch_version is not needed in modern catalogs (since CPD 5.2 support was added)

For catalogs that carry CPD 5.2 we should remove elasticsearch_version ... and we need to verify/test that image mirroring in ansible-devops handles this and knows "I don't need to mirror this".
