Add a `list_organizations` method to improve tests

This would permit checking if organizations have been created, as well as tearing them down between tests.

Seems like list_organizations was added already, but might still need to be added to the "tear down" part for e2e tests.

Those are just autogenerated types, there's no function/method for that tho
