Set up GitHub connector on dev (ingest constructorfabric org)

Configure the github connector on the dev instance to ingest data from the constructorfabric GitHub organization.

Prerequisite

• Rename the github-v2 connector to github and verify repository integrity after the rename: no stale github-v2 references left anywhere (dbt models/tags/selectors, connector descriptor, CI workflows, helm/gitops values, docs) and no conflicts with the removed legacy github connector.

Task

• Configure the connector on the dev instance with credentials for the constructorfabric org
• Trigger a sync and verify data lands end-to-end (bronze → silver → gold)
