documentation refinement and improvements

there has been various feedback from github and other sources that documentation for relay requires more revision.

this is an issue to link a future-pr of work.

focus:

• improve overall relay operations guide
• provide suggestions for deployment candidates (ie release or main)
• review every page for completeness and verbosity
• refine various sub-pages for different topics
• ensure it's clear how to receive assistance for operators

How to update relay for example would be quite useful 🙏

It would be also really nice to have some sort of small tutorial to learn how to expose all the statistics and view them with tools such as Graphana. Maybe it is too much, but a small introduction with reference to the needed external tutorials will do it
