Add the otelcol error log assertions back

Since we have this Pebble issue plaguing our solution tests:

• Potential gap in TLS context for log forwarding pebble#780

we are being failing fast and not asserting other important aspects of our solution tests. We should comment out the assertion and output the error logs as information to the reader, but not fail fast.
