In IWDEE it lets you edit the default starting parties (as CRE resources) in iwdparty.2da and howparty.2da. You can also leave spots empty to have fewer than 6. This works fine with the regular UI.
With Infinity UI++, the screen currently becomes buggy when you do this.
note: This doesn't happen for BG1EE/BG2EE/EET. For those games the file is tbpparty.2da (eet also has TBPPART_.2da), and you can set to under 6 with Infinity UI++ with no issues.
If you want to test this in IWDEE, just edit iwdparty.2da and delete BPARTY05 and BPARTY06 from the list, then try to start a game. You'll notice right away it'll be bugged. It is possible to get into the game with clicking the right buttons but it's clearly not the way it's intended to be.
