Update npm org/package naming

Description

Review and update npm package naming and org configuration:

• Evaluate if @SkillsCraft scope should be updated
• Update publishConfig across all packages if org name changes
• Ensure npm publish workflow works with correct package names
• Update all documentation references to package names

Acceptance Criteria

• Package names finalized and consistent
• publishConfig correct in all package.json files
• README install instructions match actual package names
• npm publish workflow tested
