Update gitbook documentation to reflect restructure

The monorepo restructure has changed the procedure for installing UpGrade.

To Do:

• Update the gitbook documentation for installing
• Update the docker installation documentation
• Other possible documentation updates for 6.4 (e.g. API changes)
