rename GCP tables

this should be completed before scheduled queries are set up.

please rename GCP tables and update the app.R code and get_data.R code to pull from the correct sources.

nih-nci-dceg-connect-bq2-prod.StakeHolderMetrics_RS.invited_participants_complete -> invited_participants
nih-nci-dceg-connect-bq2-prod.StakeHolderMetrics_RS.complete_table -> verified_participants

you will also need daniel to grant access to the app using these new names, so be careful when you complete this name switch.

this task needs to be partitioned into a few smaller steps:

1. Clean up BQ queries (converting the old to the new queries which use UDFs) by first ensuring the new tables are identical to the old tables
2. delete old tables/queries
3. point the compile queries to the new table queries (the query which compiles are derived variables)
4. set up scheduled queries
